Ingredients:

2 cups Arctic Shores™ frozen salad shrimp, thawed
1/2 cup diced pineapple
1/2 cup diced Farm Stand® red onion
1/4 cup diced yellow bell pepper
1/4 cup diced mango
1 jalapeño, seeded and diced
3 tablespoons chopped cilantro
- juice of 1/2 lime
- multigrain entertainment crackers
- whipped cream cheese
1 medium cucumber, thinly sliced

Directions:

1. In small bowl, combine shrimp, pineapple, onion, pepper, mango, jalapeño, cilantro and lime juice. Salt and pepper to taste. Set aside.
2. Spread crackers with cream cheese. Top with cucumber slices and shrimp salad.
3. Serve immediately.
